Domo Arigato! This hop comes from Japan, bred by the great people at the Sapporo Beer Company. Traditionally, the Japanese brewing industry prefers the smoothness of noble hop varieties from Europe, although even that is changing today. Sorachi Ace combines the smoothness of a European noble variety with citrus and a strong lemony dominance found in today’s flavor preferences. Depending on how it is used, you may also detect a hint of dill with grassy notes.
